- Varietals: SYRAH, GRENACHE Terroir: Qualitative « Terroir » of the “garrigues of Vacqueyras”. Stony, calcareous-clayey soil with a big proportion of round smooth pebbles. Planting density: 4000 vines per hectare. Yield: 35 Hectoliters per hectare. Vinification: Harvest is done manually by late September. Winemaking is traditional (destemmed and crushed), then placed in a tank with two daily pumping and a double load shedding until racking. During 12 months, the Syrah is aged in barrels for maturation, while the Grenache is aged in tank on fine lies, before blending and bottling for optimum ageing. Tasting notes: View: Dark Ruby color with carmine hints Nose: Lovely intense nose associating red fruits, “garrigue”, , cedar and cocoa taste. Mouth: Offering up Full-bodied richness and structure with notes of spices, chocolate, black fruits. The finish is smooth and long with supple tannins. Food recommendations: Serve with red meat, game, stews, casseroles, cheeses.
